Weekly Meal Plan/Groceries 12/7-12/19

I hate meal planning.  I feel like I'm always doing the same thing over and over.  I don't meal plan every week, but I did this week and here it is.  I also went grocery shopping today to institute the meal plan.  I'll link the recipes if available.  For things like "ranch dressing mix" or "taco seasoning" I substitute my own homemade version.  The same goes for "cream of" soups.

I use this more as a spring board than a strict menu.  These are the items I have ingredients for so we might not ACTUALLY have the meal on the designated night, but now I have a starting point.

Monday 12/7
Beans and Rice.  We were inspired to do this last October and have done it every Monday since, with few exceptions.  This is our weekly reminder of how fortunate we are to have full pantries and refrigerators + it's our reminder to pray for others around the world who are food insecure.  I cook black beans in the crock pot and we have just plain rice.  The kids will put taco sauce on their beans.

Tuesday 12/8
One Pan Ranch Pork Chops.  I have regular potatoes on hand so I will use those instead of red potatoes.  In all honesty, when I saw the pin on Pinterest I didn't pay attention to the veggies, just the main dish.  I happened to buy green beans & russet potatoes today so we'll do these.  I love red potatoes and they were on sale (just not as cheap as the russets) so if I'd been paying attn. I might've bought those.  Oh well.  (If I use parsley it'll be dried and not fresh).  We've never had this exact recipe, but we've had similar ones that I've baked in oven using chicken so I'm sure this will be fine with the family.

Wednesday 12/9Ginger Beef Mushroom Kale Stir Fry.  My husband and kids react to kale much like the blogger's dad, but they still loved this the 1st time I made it.  I'm using just baby portobello mushrooms instead of the combination of portobellos & shiitake.

Thursday 12/10
Shepherd's Pie.  I kind of make my own up as I go, but it's similar to this one from Rachael Ray.  I'll put this in two 8x8 pans.   I'll bake one pan Thursday night and then stick other in the freezer so I can defrost and put it in the oven another night when I don't have time to cook, or just don't want to.

Friday 12/11Sausage Potato Spinach Soup.  I'll use regular sausage instead of spicy, because that's what I have.  I'll also be using russet potatoes again.  We've never had this, so time will tell if the family will eat it or not.  Here's hoping!

Saturday 12/12
Cilantro Lime Chicken. My family LOVES this.  I won't use onions, because onions don't go over well with tummies around here, but this is a huge hit.  Saturday night we'll use some meat to make burritos with cheese, sour cream and beans.   I'll save the rest of the meat for Tuesday 12/15's meal.

Sour Cream Enchilladas.  I'll probably make tweaks (and may even search for a new recipe), but it's a starting point.  I will use the rest of the cilantro lime chicken from Saturday night.

Wednesday 12/16
My husband and son will be eating at a Cub Scouts Court of Honor ceremony so . . . Mom's not cooking.  My daughter and I will probably just figure something out, or may even go to Chick Fil A.  We'll see.   No matter what I won't be cooking :D

Thursday 12/17
Crock Pot Zuppa Toscana.  I've never made this before so we'll see how it goes . . .

Friday 12/18
Hamburger Stroganoff.  Similar to this recipe I'll make a healthier version of Hamburger Helper Beef Stroganoff

Saturday 12/18 & Sunday 12/19
I don't know.  Saturday will be a crock pot meal since we attend a Saturday night service at church.


Here's what I bought at the grocery store today.  I went to 2 stores.  I bought a lot of meat to stock the freezer.  I already have ground beef in the freezer to use for the meals above, and it wasn't on sale this week, so I didn't buy it.  I buy meat when it's on sale and stock up.  My freezer and my FoodSaver are my best friends.

Meal Plan 6/19-7/14

Friday 6/19--Cod & Veggies
Saturday 6/20--Cilantro Lime Chicken (I had mine over a bed of lettuce, Steve & the kids made burritos.  We had sour cream, homemade salsa and cheese as options for topping it)
Sunday 6/21--Father's Day so we went out
Monday 6/22-- Beans & Rice.  I soak dried beans starting on Saturday and then cook them in the crock pot on Monday.
Tuesday 6/23--Cream Cheese Chicken (From my favorite cook book CrockOn!)
Wednesday 6/24--Cheater Korean Beef.  We ate this over a bowl of lettuce

We'll be on vacation 7/6-7/14, but we're renting a cabin in the mountains.  To make life easier I've been making double batches of food and freezing it.  We'll probably eat out a couple of times, but most of the time I'll be defrosting food we've packed so I have a few meals planned

Get Off My Beam!

I'm one of #the4500 ladies who applied to be on Jen Hatmaker's launch team for her new book, For The Love, that releases in August, but weren't selected to be one of the 500 on the official launch team.   Jen & Thomas Nelson were generous enough to give us 4 chapters to tease us, um I mean preview before August.  Jen also shared an essay "Worst Beam Ever" about priorities and things having to get kicked off our beam in order for our lives to have balance.

In late 2013 I went back to work part time.  I tried quitting in March, 2014 but my boss, as well as my supervisor who happens to be one of my good friends, both encouraged me to cut back and stay on.  I accepted the reduced hours.  In November 2014 I realized how many things had become off balance as a result of having this on my beam.  There was one client in particular I absolutely LOVED working for, and they were the hardest to say good-bye to.

I hadn't told my husband I was considering quitting.  I just did.  One night I submitted my work for the week, submitted my letter of resignation about 5 minutes later and then went in the family room where he was watching TV and said "I just quit."  My quiet, introverted husband was ecstatic!  After I quit he admitted to me that he never really wanted me to work in the first place, but he didn't want to tell me "No" since it's something I was so excited about.

In February, 2015 I stopped being a consultant for Thirty-One gifts after nearly 6 years.   I wasn't making money because our family life was too busy to do parties and all my friends are on strict budgets.   After limping along in that business for awhile I told God "I'll stay active as long as you want me to, but I'm no longer going to force it."   For about 1.5 years I would get an order about 2 weeks before going inactive (I had to have a minimum amount of sales ever 3 months) that would keep me active for another 3 months.  Well . . . that came to an end in Feb, 2015 and I'm ok with it.

Though the beam gets wobbly at times, it's fairly balanced and I can handle things the way they are right now without too much stress.

This afternoon I had my phone on silent and when I looked at it about an hour later I saw a message from my friend and former co-worker asking if I'd be interested in working for my favorite former client as my own boss (instead of doing work for them as part of another company).  My gut reaction was to say, "Yes."  I'd love to work for them again.  They are the only people I'd consider working for.   I was tempted to say, "Yes." I wanted to say, "Yes."  Then I remembered the beam.  I remembered how my husband reacted when I told him I'd quit.  I remember the squeal my 8 year old son let out, and the way he ran across the room to choke hug my neck when I told him and my daughter that I'd quit.  I realized my beam doesn't have room for working right now.

Tonight my husband will get home from work and I'll tell him, "I was approached about going back to work today.  I said, 'No.'"
